Did you know “tandoori” does not refer to a recipe, but is a method of cooking? Tandoori cooking is a popular technique for a tender and flavorful way to prepare various Indian Food. While many people are familiar with a tandoor from cooking naan bread, it is also used for cooking marinated meats or vegetables over a fire. A “tandoor” is a kind of oven, large enough to hold a small fire. The tandoor has an intense heat, with a cooking environment that can reach 600F. Marinated meats are placed into the oven on long metal skewers and cooked in this hot “pit”. The marinade starts with yogurt and is then flavored with garlic, ginger, coriander powder, cayenne pepper, and garam masala. The meats sit in this thick marinade for several hours so that it can properly absorb the flavors. After a generous amount of time for marinating, then they are ready to be cooked.
